I wrote a longer post about Crouse in the past, but I'll give a summarized version.
Crouse is a solid player, great tools, big, physical, good skater, surprisingly good shooter/scorer (the 15%+ sh% aren't just a fluke).
But here's the thing, plays die on his stick. Think Mikheyev or Kapanen for former Leafs, different play style but similar issue, or Foegle is another example whos a similar type of player. You see the stats playing with lesser players and you think about what they'd do playing higher in the lineup or with better players. But the lack of creativity and vision turns them into a hindrance when you stick them with top end players. We tried it with Mikheyev and Kapanen, Carolina and Edmonton tried it with Foegle but it doesn't work.
Crouse would be terrific on the 3rd line much the same way Miky abd Kapanen were weapons for us on the 3rd lines but I'm doubtful he'd be the answer for a top 6 LW.

Why is Crouse so overvalued here? Am I missing something? Like I understand the appeal because of his size but he's THAT great. But maybe I'm missing something though?

The Florida Panthers have accepted that they are likely out and given some of the big prices paid would like to sell on some guys.
But most of the buyers who would be willing to pay high prices may have already spent the capital they are willing to move.

For some odd reason, teams in the East just went crazy. It is like they all thought this is the year to push and go all in despite Bruins having the Historic Season. In a way, that’s pretty disrespectful to the Bruins, literally telling them regular season success means nothing.Man, I remember the days about a decade ago when me and a few buddies would burn up a vacation day to spend the day together watching the trade deadline shows, anticipating the big deals coming from the Leafs and around the league. After being disappointed for a couple years straight, sitting there bored based on the inaction and/or lack of big deals, we decided it was no longer worth wasting up a whole vacation day when it could be better served another time. LOL
I hate quoting myself.. but here I am... more because I wanted to expand upon this.Every single power forward is overvalued. They are rare. Tom Wilson, Josh Anderson, Jeannot.... and so on.
Crouse does have a high shooting percentage this year, but then most of his goals are within 10 feet of the net... it's that way most seasons (his goals). He has a knack for being in the right place, at the right time. He's playing with Maccelli and Bjugstad, so it's not like he's blessed to be playing with talent. He fights, he stands up for teammates, he's physical... 200 hits a year, and good for 20 goals a year playing with Arizona.
He's basically Knies, with NHL experience and a track record. People like Crouse, for the same reason we are excited about Knies. He's just a rare player to have. No, he's not great, but he's probably a very good compliment to what we have. He can probably play top six for us, is a true LW, and allow us to roll three good lines. He's on a crap team, with positive +- (I know...), his relative corsi/fenwick are good, and his line is positive xGoals%... and his lines have consistently been that way over his career. He isn't a great passer, (Note @VanW27 has suggested plays die on his stick... like I said he's not a good passer... he's a guy who needs to keep the game simple... get the puck, give it to someone who can do something with it, get in a spot to shoot, but it's a limitation for sure) but he's good in the corners, forechecks well, gets in front of the net, and can score. He has above average skating.
It's nice having some players on your team, who can play a physical game... but typically those guys are in your bottom six, bottom pairing... and we have those guys now... this is a guy who can play that game in your top six.
