Absolutely love this song. Think I've posted before and have long contended I was introduced to this in the animated Spiderman (1967) cartoon. It's probably not the exact song but it was very close. Original by Booker T and the MGs (last vid with a nod to American Graffiti).

Great post. You can find a couple of them in this video. The Blues Brothers was such an amazing movie for music. Well known to most adults at the time, but I was basically a kid.This song is just too cool. It's so laid back and easy with an irresistible groove. Being curious about this song, and never having heard another song from them, one decides it's a good idea to YouTube/wiki about the the song and artists and you come to find it's a pretty interesting story.
They were the house band for Stax records and played on albums by Sam And Dave, Otis Redding, Wilson Pickett, Bill Withers and others. Having 2 black members and 2 white members, they were one of the first integrated bands in American history. Long story short, the song came about from them just killing time waiting for a singer to show up for recording. The singer never showed up and, "Green Onions" was born.
The members of the band are, Booker T. Jones (organ), Steve Cropper (Guitar), Donald "Ducky" Dunn (Bass), (Lewie Steinberg was the original bassist) and Albert Jackson Jr (Drums).

Great selections and three is incredibly hard to narrow it down to. I could easily go with three of your four (or all four) and not be remotely unhappy about it.
I got to thinking about it before you added Stairway to Heaven and that song resonates very strongly with me, could easily be one of the three, largely owing to junior high dances. It was fabulously confusing as it picked up pace (and clunked its way through tracks on the 8 track in the gymnasium) because it clearly started as a "waltz". As a young male you steadfastly clung to the poor young woman even if she tried to break away to match the pace of the song. No sorry my dear, you shall not escape my grasp, this is the peak of my physical contact with a young girl for years to come. In grade 8 my big crush on a grade 9 girl actually asked me to dance to it out of the blue. No idea if she was put up to it by someone else, but I honestly don't care. It was nearly 8 minutes of nirvana I haven't forgotten to this day. I swear I had a grin on my face for a week. That it happens to be a crazy musical piece just adds to the enjoyment. Also a fabulous introduction to Led Zeppelin to a young mind that was listening largely to A.M. radio at the time.
