Nice honor, but it doesn't seem to necessarily guarantee a stellar NHL career for some reason

Simple reason: there are many more leagues that give awards to their best goalie than there are available starting spots for goalies in the NHL.
This isn't the Manitoba Junior B Hockey League we're talking about here.

It's one of the top 3 junior leagues on the planet. When you look at the OHL MOP, you see a lot more translation to star in the NHL (although there are more than a couple of busts on this list too)

Yes, there are 32 roster spots for starting NHL goalies, 30 until recently. How many players on that list even crack that number, not to mention the top 3 multiple seasons that you'd need to be considered a "star" goalie?

It's a numbers game. If Dom turns out to be the best goalie of any young best goalie in any league this season, he's still not statistically likely to be an above average NHL starter. But he now has one season of being a great young goalie, which is probably necessary, though not sufficient, to become an above average starter.

There are no more or less NHL goaltending jobs than there are forward or defense jobs, relatively speaking

You have to remember, there are only so many junior goalies too.

My point is that if you're the top forward in the OHL, chances are that you'll go on to be a good NHL player more often than if you're the top goalie (for whatever reason)
