Help an old guy out with cutting the cord. Do all of these streaming services have a PVR built-in? Or even just pause and skip functionality? Or do you use an external PVR of so sort? Or do you just watch ads, Kelly Hrudey, and betting updates like a chump? That last one and the fact that I'm into sports covered by multiple networks is what makes cable worth it to me but I'm totally open to a better way.

I cut the cord about 2-3 years ago and definitely can say that cable/satellite is still the “better way”.
All games immediately available, PVR, no buffering, latency issues. It’s total convenience. But it’s the cost that got to me. In order to get what you want to watch you gotta buy all the other crap channels and services . I was paying 200 bucks a month to Shaw for my satellite service, plus internet for household use.
I use a combination of legit and some not so legit methods to watch sports now (and all TV for that matter). I have Prime, ESPN+ apps when I’m in the USA, I also get nearly 80 OTA fully digital tv channels here in PHX and I also use a “special” fire stick and a VPN that helps when back in Canada. I dont ever miss a game that I want to watch. If you haven’t noticed cable is one stop shopping, to do otherwise means jumping through a lot of hoops. And the quality isn’t always as good as the internet capability and server capabilities of some of these other options dictates how smooth the watch goes.
But all in all, I pay 12 bucks for ESPN+ monthly for about 6 months, I already had Prime (i also have a Netflix sub). So my $$ to watch is way less than cable/sat. In the summer when I’m back in Canada I watch way less TV so not having the over the air channels that I get in Phx is no big deal.
Not always convenient but I was tired of Shaw gouging me.
