I have so many questions.

How did he know the other player was a Mennonite?
As someone directly above me pointed out -- is calling someone a Mennonite an insult?
Generally speaking, most Mennonites have very typical names that are quite synonymous with being Mennonite

Don't make comments on religious creed or ethnic origins. That's not difficult.

(Even if, in that case, unless there's something I don't know about the word Mennonites, it's just a denomination, like Catholic, just significantly less mainstream)
Closer to Amish than Catholic. Maybe the guy had a beard or something.

Dude didn’t even know what it meant apparently so maybe this is a good life lesson that you shouldn’t just go around yelling something because it sounded funny on letterkenny.

As far as I know its not an insult at all.
Sure if you add a negative verb like dirty, stupid etc then that's different but to just call a guy a Mennonite seems rather pedestrian
I think context matters here, consider the differences:

"I have learned from my great friend and teammate about what it means to play hockey while honoring your culture and heritage as a Jew"

"You suck, Jew" [to an opposing player]

Then tell the player he's ugly
I know the rule is intended to deter discrimation against religion, ethnicity, etc., but on a personal level I always found it a bit funny that someone could insult any sort of physical feature I have that's lacking but couldn't insult me being half Asian, even though I can personally say that I'd be more offended at the insult to my appearance over the insult to me "eating rice" or whatever.

I think both of those would work as a chirp, the 1st 1 would totally mess with a random opposing player

I mean, without context I wouldn't normally go so far as a suspension. That's not exactly commonly used as an insult, in my experience. (Indeed, there's a running joke around here that the most effective way to sell something in Ohio is to call it Amish or Mennonite, whether or not it genuinely comes from those cultures or not.)

I'd be inclined to guess this is more a body-of-work suspension rather than the actual act itself. Like, he'd pulled enough edgelord shit already that if he opted to spit on the sidewalk he'd get the book thrown at him.

I think even if the player *was* a Mennonite the tone matters. You can't use it in a pejorative way, even if it's accurate.

Just like any other ethnic or religious term, the tone and context makes a big difference. I do not think there is any nice way of calling someone a Mennonite in the heat of a hockey game.

Could be the same thing there. I don't know the guy so I couldn't say. I'm more trying to consider how, if I was in the shoes of those disciplinarians, how I might end up coming to a similar conclusion.
I get the sense it has an odd element to it.
Where the player called the other player a Mennonite and the other player wasn't insulted at all. The ref heard it and the issue is that Sim thought calling someone a Mennonite was an insult.

I hesitate to go with that because it implies far more malice and/or incompetence than is necessary for such a thing to happen and so Occam's Razor might be applicable.

That said, there's just not enough information and evidence for any of us to have a firm conclusion.
