If I get a Series S and I get my brother one (who's in another country) then can we share a Gamepass Ultimate subscription and also, would we be able to play games with/against each other on that subscription or would we need different subscriptions?
Depends on where you are located. Colombia and Ireland have a Family & Friends version of Game Pass Ultimate, which is more expensive and allows you to do what you want with up to 5 people sharing one account.
Until it's available elsewhere, you would need two subscriptions because you are playing two instances of the game.
