Parmesan is the go to on pasta, but for burritos and things like that it's gotta be provolone

For pasta, I use a mix, that I got from a top restaurant in Italy.

70% Romano cheese + 30% Parmiggiano

Also, always go for the best Parmesan, the Reggiano not the Padano.

Grated parmiggiano will keep for a few months in the freezer and stays loose, it doesn’t clump.
