Pulled up my rhubarb patch on the weekend and started making some Rhubarb Crisp...

This is my third year making it and it is a big hit with family and co-workers. It's best heated in the microwave and topped with some vanilla ice cream. Yum...:nod:

If there are any lovers of fish in the group, I'm going to recommend you check out the Skipper Otto member supported fishery. This is my second year as a member and I've been extremely and consistently pleased with the quality of fish I've received from them. Here's some Seared Pink Salmon and Lingcod served with a Chanterelle Risotto cooked in Lobster Broth and a medley of Fresh Corn, Tomato and Zuchini I served on the weekend. The second shot is from a rainy day last last June - Pink and Spiny Scallops with Pink Salmon and Shrimp served with Orzo.

I tend not to overthink stuff like this. Dump a jar of salsa into cooked rice... Bob's your uncle, Spanish rice. :laugh:

can i have your spanish rice recipe?
it should be so simple and easy to make but i can never ever get it right

Not sure how many you cook for so, I'll just go with one cup of rice and you can multiply it as much as you like.

One cup long grain rice (I like to use Thai rice)
one cup chicken broth
one cup tomato juice
2/3 cup finely chopped onion
1/3 cup chopped jalapeno
1/3 cup chopped red pepper
1/3 cup chopped cilantro (omit it if you're "one of those people" :laugh:)
2 T olive oil
1 t ground cumin

Saute the rice and onion in the olive oil until the rice starts to look toasted - about 5 minutes
Add the cumin and mix through
Add the tomato juice and chicken broth and bring to boil
cover and turn heat to low - cook for 20 minutes
remove cover and allow steam to dissipate for a minute or two
stir in peppers and cilantro and serve

Actually, you're not far off. Saute the rice with some onion, then add some salsa mixed with chicken broth or water (two-2.5 cups liquid to one cup rice) bring to boil, cover, cook for 20 mins. and Roberto is your uncle.

It all looks great but man that Cheese toast is a beauty. Looks like you have a garlic butter spread under the melted layer?

Lately, I have been really sucking with my lake spreads. I usually am solid but I have been battling through a rough stretch.

Cheese Toast

There are a ton of recipes on the interwebz and elsewhere for "Hy's Cheese Toast". I make no claims that this is a Hy's recipe but it's a pretty decent cheese toast.

8-10 1" thick slices of a french loaf (a fatter loaf, not a thin baguette)

1/2 can of Cheddar Cheese Soup
2-3 T cream
About 8oz of grated cheese (whatever you have on hand cheddar, gouda, havarti, a mixture... )
1/4 cup grated parmesan
1t Worcestershire
1t dijon mustard

1/2 cup butter
1-2 garlic cloves crushed

Mix together the cheese, liquids and seasonings

Heat the butter with the garlic

Place the bread on a baking sheet and lightly toast under the broiler - flip and toast the other side.
Brush the toast with the melted garlic butter
Spread the cheese mixture evenly over the toast
Place the toast back under the broiler (not too close to the heating element) and broil until desired colour

Only shop specials these days for beef, and stock up when a good price hits.

Miller Meats releases their specials every Thursday and usually have a solid deal on some sorta beef product. This week Whole Tenderloin: $15.49/lb. $34.16/kg which is a decent price for tenderloin.

Weekly Specials — Miller's Meats

They will cut the whole tenderloin into steaks for you if you ask
