My genres are very fluid and I honestly have no clue about sound signatures. I'm likely as basic bitch on your scale as you are to hers. Definitely not a huge bass fan though unless we're talking the various fish of the same name...
Wireless is not my area of highest knowledge, but I do read the turbonerds.
I've been very happy with these.

The price there is not what can get anywhere else. The XM5s exist but don't provide additional benefit for the cost.
This is one of the commonly suggested options. It seems to be a very contentious topic as to whether the XM4s or XM5s actually sound better.
The other option in that price range is the Sennheiser Momentum 4. I still have a Momentum 2 I've had for roughly a decade that I use as my travel pair. Sennheisers have a warmer sound that most others. I love them. My wife hates them. It's just personal preference.
The trendy super budget option is this pair, which is actually what my wife uses for travel. She has cables for her home headphones that cost more than this. Life Q35
One thing I will say is that sadly they're not a brick and mortar store, but we have a fantastic online audio store in the area. It's Bloom Audio just over the Voorhees border into Gibbsboro. They'll talk with you and help you answer your questions. Their staff is extremely knowledgeable. They've even set up in-person sessions for my wife to see which hardware she preferred. I don't know if they do that for everyone, but it's worth a shot if you think it'll help you.
