2.0 or 2.1 systems are fine. the numbers in home theater breakdown like this:
first column = number of total speakers on the main channels (front, rear, center, sides)
second column = number of subwoofers
third column = atmos speakers (this is new, and accounts for speakers in/on the ceiling for height)
so a 5.1.0 system has five speakers; fronts, center, rears, and a subwoofer
a 7.2.4 system has seven main speakers; fronts, center, rears, sides, two subwoofers, and four speakers in height-mode.
You can easily get by with a 2.0 or 2.1 system for normal use. The full package is really nice IMO for sports and movies, because dialogue is handled from the center channel and it makes resolution much clearer.
I also am not subscribed to floorstanding speakers (tall ones) because they take up a ton of space and bookshelf speakers in the right combination can bring 99.5% of the volume and noise and clarity in normal sized rooms.
Even for a decent 2.0 or 2.1 system you're going to be spending a few hundred bucks considering amplifier+speaker costs.
