I do all the cooking in my home and the first time i make a new recipe is torture. Since I generally have no idea what i'm doing, i like to follow for the first time, and then start iterating from there. After three or four times making the dish i really enjoy it since i have the gist in my head and can just go with it a bit.

Basically same as me. Baking and stuff where I know proportions are crucial, basically. Made gelato this weekend and did follow exact measurements because I wanted that great texture gelatos have, and it's driven by fat and sugar content.

But other than that, recipes are just inspiration. When you've been a long time cooking without following exact recipes, you understand how ingredients interact, flavors develop, etc. And you start understanding what goes well with what.

Sometimes reading some of the comments on online recipes just physically hurts.

Also crazy how many people think garlic powder, raw garlic, commercial minced or pureed garlic, etc. are interchangeable. Or dried herbs vs fresh herbs.
