Yeah, the funniest part is...we were one of the first to lose the power too...but we got it back probably second last. There are still some people without it even today. This was like the minimal impact tree stuffCompletely unacceptable, people will freeze to death. I don't think it was even five days without power for me when Fiona hit.

does your oven Have a convection roast option? If so cook it at 350 until it’s internal temp is 110f, let rest for 10-15 minutes before carving that should ensure the outer slices won’t be rare. I did a two bone prime rib on Sunday and it looks about the same size, pulled it at 90f and it was perfectly rare. Enjoy, and don’t forget the horseradish……….Just picked up a 4 pound piece of prime roast to cook on Christmas Day.
Any roasts I've done have been in a slow cooker.
Looking for tips on how to cook this one in the oven so it's medium done. I can go medium rare but a few in the group can't handle that.
So what temperature and for how long to cook in oven for a medium finish?

Do you have the space to cook on BGE or similar? I got one a couple of years back and kick myself for not doing it sooner. It takes meat to a whole new level.
