Get to Know Your Fellow Canes Fans - PART II

I had a brief stop in Montana prior to this, but 7 years different spots in Texas before that. I learned how to smoke brisket there, and to favor vinegar-based BBQ sauce. I’ve seen signs around here advertising Memphis style. I would welcome learning the nuances of local style. First of all, what do you call it? Secondly, tailgate at hockey games?! Sounds wonderful. I’ve only seen that at special occasions.

We call it BBQ. If you call it anything else, it probably means you are from somewhere else. Now, you might hear some call it eastern or western or the mustard shit from South Cackalacky, but usually the labels are reserved for the stuff we believe is just wrong. The good stuff is just BBQ.

As for tailgating, it is a thing all year round, but it becomes more prevalent when the weather is better, of course. I am not one of the die hards in that regard on this board.

You’re in an interesting location for experiencing different BBQ to the east and west. On the other hand, if you head east into NC you’re going to be solidly in pulled-pork territory. Again the mountains are pretty sparse for BBQ, but once you get as far as the foothills west of Charlotte you start seeing an established BBQ culture. In that western part of the state, tomato-flavored sauces are dominant (and it’s not unheard of for people to straight up put ketchup on BBQ sandwiches, which enrages people who take this stuff seriously). The red sauce is what people refer to as “Lexington Style”, after a small town near the exact center of the state. Once you get a little east of center, you pass into the “eastern style” area where a vinegar based sauce dominates. In my experience, Eastern style takes some getting used to if you didn’t grow up with it, especially for people who don’t care for vinegary flavors.

Finally, you also have the option of heading due south through Asheville, just keep on going and you’re in upstate South Carolina. The northern border area takes after western NC with the tomato and ketchup based sauces, but the middle of the state is mustard territory. This is a point of contention that is better left unexplored among a bunch of NC’ers.

So yeah, if BBQ is your thing, there are something like 4-6 distinct styles within a 4-hour radius of you. And like a Texas or St Louis, this topic instantly sparks conversation with perfect strangers in the Carolinas, so be prepared for people to come on really strong about it (especially in eastern NC where people might take it a bit too seriously).
