Absolutely! I think that you could use a goaltender's save percentage as the expected value (although my impression is that if you do, most goaltenders will center around average, since they're being measured against their own body of work).
In a sense, I do this when looking at the elimination games, because the hypothesis test I run says "has this goaltender demonstrated performance above (or below) their overall body of playoff work?".
