I'm doing oven baked chicken wings for dinner tonight and found this recipe:



It calls for the wings to be tossed in baking powder and salt rather than flour like most recipes. Thoughts? Have any of you try using baking powder to coat chicken wings? Would they be as great as the recipe author suggests?

I've done this but with the following recipe. The drying period is very important. They're VERY good.

The wife is of German heritage, so she's getting sauerbraten mit Ingwerkeks Bratensoße, bratkartoffeln und sauerkraut. Schmeckt! :nod:
So a quick Google translate gives me:

"sauerbraten with ginger biscuits gravy, fried potatoes and sauerkraut" - with 'sauerbraten' being German for sour roast.

That's a lot of sour for a German people known for their joviality!

I've never tried it and I'm a terrible cook and the last person you should take advice from, but....

My older sister married a guy who cooks and he uses baking powder when he does his chicken. Really good chicken, too, like out of a deep fryer. The one big caution is to make sure your powder does NOT contain aluminum. They always used Rumford Baking Powder because apparently other powder brands leave you with a bitter tasting chicken.

I forgot to take pics but the wings were absolutely devoured! I did four pounds of wings and we have exactly one left.

I used Magic baking powder - couldn't find Rumford - and there was no bitterness at all. And no aluminum on the ingredient list. I've already had requests from the kids to do it again. And soon.

That top tapa, is that a Spanish potato omelet?
Indeed it is - with some Ailoli (a sort of garlic mayo) in the centre. It's not the traditional recipe btw. It's a brilliant idea of Ferran Adria (Founder of el Bulli and considered by many to be the father of molecular gastronomy) which substitutes potato chips for the potatoes. I've made it several times and it's fantastic.

I do loves me some Sliders!

These are a lot easier than you think. Slice a load of onions thin and spread them out on a baking pan. Take a couple of pounds of lean or extra lean ground beef and press it into a slab a bit bigger than the sheet of dinner rolls and press it onto the sliced onions. Pop the pan into a 375 degree oven for 10-15 mins (don’t go longer or the beef will dry out.). While the beef is cooking, slice the sheet of 12 dinner rolls and toast the inside of the tops and bottoms. Put the bottoms on another small baking pan and cover with cheese slices. Top with the slab of beef (the onions should be stuck to the bottom). Cover the beef with more cheese slices, top with dill pickle slices and then the sheet of the bun tops and wrap in foil. Pop in a 300 degree oven for about 15 - 20 minutes. Cut into individual sliders and serve.
