Snacks and a Raclette dinner on Xmas Eve...

Christmas dinner appies: Raspberry Points on the half shell, Foie Gras Parfait with Fig Butter, Caviar with Buckwheat Blinis. We washed it down with iced vodka, champagne and a sauternes.

Coincidentally, we also had beef t'loin and stuffed baked potatoes for our private Xmas dinner. Unfortunately, I'm not allowed to stop at that level of doneness. If my wife saw that, she would say it was still mooing. :laugh: So, medium to medium-well it must be.

Have you found a sinus-clearing horseradish? I'm getting so tired of trying "extra hot" and "damn hot" ones and they are nothing. Only Atomic (The Keg uses it) has the desired effect and I have yet to find a retail source in Canada.

I find horseradish to be inconsistent. I’ve heard about the Atomic but I’m not sure I’ve tried it. I usually buy a refrigerated radish such as Strubs or Elmans.

Almost bought an air fryer today at Best Buy. Can anyone recommend a specific kind?

For my mom, roasting and dehydrating were synonymous. When I got to be a teenager, I would ask my mom what was for dinner. More often than not, I would tell her I would make my own dinner. I'll tell you, there's nothing like a British mom to prepare you for leaving the nest. :laugh:

Sorry if I've posted this before but, it's a very easy dish which is perfectly suited to a dinner party. David Chang's (of Momofuku fame) version of Bo Ssam. It's a brined and slow cooked pork shoulder served with a couple of sauces and condiments. Guests use tongs to tear off chunks of the falling apart shoulder and wrap it in lettuce (or Peking pancakes) with the sauces and condiments. Nice thing about it is almost everything is prepeared ahead of time. Always a hit - here it is at NYE.


(adjustments: I rinse the pork well before popping in the oven. I skip the oysters. I double all of the liquids in the Ginger Scallion Sauce (erroneously called Ginger Shallot sauce in this recipe)

The bottom one is what I did for Xmas eve lol. I didn't take any pics though:

Prime rib roast with a honey djon sauce, ceaser salad, and roasted cauliflower.

Anyone have a flat top griddle?
I'm thinking of getting one for summer.
Any recommendations on which kind, where to purchase it, what accessories?
I've looked at videos for Blackstone and Weber.

OK, you GOTTA try this cornbread. Got the recipe from someone in my FB cooking group. KILLER. Served it with some green chilli.

Cornbread
Mix 4 eggs, 1 cup sour cream, 1 cup creamed corn and about 1 cup loosely packed grated sharp cheddar in a mixing bowl and set aside. Cover the bottom and sides of a 10inch non stick or well seasoned cast iron pan with bacon (I cut mine into small pieces but do it however you wish). Cook the bacon in a 400 degree oven until almost cooked but not yet crisp. Add 1 cup self rising cornmeal OR 1 cup cornbread mix to your liquid ingredients in the bowl and mix well. DO NOT drain grease from your bacon - pour batter over the bacon and pop the pan in a 400 degree oven for about 25 mins. Carefully invert pan onto a plate or board, bang a couple of times and slowly lift the pan off the cornbread. Devour while still warm.

Needs some help finding mirin. I found a Korean Kalbi bbq short ribs recipe that I want to try but I can't find mirin at our local stores in the west end of the city. Any thoughts?

"Mirin, a sweet rice wine, helps to tenderize the meat and adds a mild sweetness to the marinade."

Any oriental market will have it. I don't know what you have in the west end, you might have to go downtown. I shop a lot at Sun Wah on King St. Note that mirin is salted so keep that in mind for your seasoning.

Edit: My Superstore on Bison Dr has it in their international foods aisle, but there is a large oriental population in that area. Don't know if yours would have it.
