I learned that trick from ChefSteps. It's a shame they stopped doing all these educational videos to focus on their sous-vide cooking machine Joules, and then proceeded to only make sous-vide videos. Their older videos are packed with great tips and techniques.

I'll look through them. I absolutely love to cook and have loved it for as long as I can remember. We didn't have a ton of money growing up so we very rarely ate out, we cooked almost everything we could afford. I majored in Chemistry in college and I feel like food chemistry is a very real thing.


This video is for low and slow roasting, which also works well (probably better), but sometimes I'm not patient, and I'm a bit weird in that I kinda like burnt flavors


Finally someone else that does. :laugh: I don't always like burnt flavors but when done right they add a ton of earthiness, sweetness and depth.

Love DC to visit, would never want to live there though.
Outside DC. Inside DC is still expensive.

There are places but they're pretty far from the lab. I'd prefer not to drive 30 or 40 minutes through traffic.
