I've already went through the science of the hoodie thing, its limitations, and when it doesn't hold true.

I've never said deglazing was bad. I do it all the time. Just not with alcohol, by principle. I give no crap about the alcohol being evaporated. And, yeah, it's evaporated. Not "burnt into sugar" lmao. I use stocks, vinegars, juices, kombucha, etc.

On the topic of stocks...one thing I struggle with is the creation of stock from raw ingredients. I rarely seem to get it just right, my stocks are usually either too watery or too salty unless I explicitly follow a recipe. I'm pretty good with seafood stock, I do that one pretty well, but tonight my beef stock didn't come together as well as I hoped. It was a little bland.

You know I remember a lot of people here giving Big Bang Theory crap for being such a terrible show but I'm going to go back and watch the first few seasons.

There was a time when that show wasn't reviled.

If I had to guess, the first few seasons might be good, until all the characters get Flanderized

Probably so.
I have been watching random YouTube clips of the show the past few days and some of them were from later seasons, and they were still pretty decent.

have you tried broiling the veggies, bones and meats?

i don't make homemade beef broth since i don't eat beef enough to justify making beef broth without buying cuts just for it, but I generally broil the veggies at least whenever i make a vegetable broth or a mushroom stock (not with chicken and seafood stocks as I prefer these to be on the lighter side)

Pre-baby I would always brown them on a range beforehand but I've never broiled vegetables or meats strictly for the purposes of making a stock (I tend not to use my broiler very often unless I'm making fish.) I should have thought of it though, because I've heard that broiling the beef bones dramatically improves a beef & barley soup. I'll consider it next time, thanks a lot.

Normally I don't do much with beef either, but we get 50 lbs of meat (random cuts) delivered to our house every month and I wanted to try doing something different than the standard ossobuco-ish stuff with the beef shank this time.

It was alright for what it was. People hated the Kingsley character and the twist but the kid helping him was cool as well as the end.

Note: the scientist woman was supposed to be the main villain but there was a script change

I learned that trick from ChefSteps. It's a shame they stopped doing all these educational videos to focus on their sous-vide cooking machine Joules, and then proceeded to only make sous-vide videos. Their older videos are packed with great tips and techniques.

This video is for low and slow roasting, which also works well (probably better), but sometimes I'm not patient, and I'm a bit weird in that I kinda like burnt flavors

There's that scene where one of the Mark units saves a bunch of people falling.

That was dumb, like really dumb.

We're all falling, but we can still talk to each other. Oh, just hold hands, you all totally have strong enough hands and arms to support the weight of each other when I stop us
