Yeah I bring this up because I was listening to a podcast yesterday and they were talking about the long road trips in the west of canada for the minor league players, it's a hard life

it may be easier in the east where it's more populated and you can take the bus from sauga to kitchener or barrie ont

Mississauga has I think 8 teams within or around a two hour drive, plus 2 more around the three hour mark. I hated driving for work in a jam packed city but love driving around the province on my own time. One year I hit every rink in the province except one thanks to weather. Some other teams travel even less.

What are chemist @TheGreenTBer thoughts on molecular gastronomy and sous vide principles / liquid nitrogen

I don't consider myself qualified to speak on those fronts in general.

I love the concept of using liquid nitrogen in theory though. It is extremely inert chemically so it won't by itself serve as an oxidizer (though it can condense O2 in its immediate vicinity because liquid nitrogen is colder than LOX and LOX is hazardous), but it will almost instantly freeze anything it comes into contact with. You can make absolutely killer ice cream with liquid N2; I like my ice cream ridiculously dense and smooth and N2 does the trick.
