Again I still don't know how the health or gun system works and I'm nearly 50% into the game in St Denis. I just went around carrying around 2 pistols and I didn't put anything on my horse. The only bad thing about RDR2 is the gun system is so complicated. You can't just wheel through all the weapons on your person like you could GTA 3-V.
Guy just going around with a pistol, submachine gun, purple "tool", assault rifle and rocket launcher and several grenades

You can buy food and tonics from butchers/doctors/stores/the catalogue to eat. Or cook meat from animals you hunt/season it at your campfire. Like with mint, oregano, and other herbal shit you can pick.
