Had a pretty awesome food tour while in Philly this weekend. Great city. Great food scene.

Pizza and Cheesesteaks from Angelo’s before the game on Saturday.

Herschel’s pastrami and a Beiler’s fritter at Reading Terminal Market

Drinks at the Dandelion and dinner at A Kitchen in Rittenhouse.

Before getting to the airport today, made a stop at Shay’s Steaks. This one blew me away, I preferred this to Angelo’s.

Suprema Coffee on Pine and 15th was a standout coffee experience. Awesome and diverse menu.

You guys ever go the whole day with no food except for 2 free coffees at work.

I last ate at 7pm yesterday and had nothing till I came home at 5.

Chicken and broccoli from the Chinese place.

I always get lo mein rice.

I totally forgot about breakfast and lunch.

Anyone work that gives you free coffee?

Our company is nationwide and they have a coffee department.

They send different keurig flavors

2 boxes, sugar and creamer even though I drink black coffee w/ sugar.

Anyone drink black coffee?

Last month we got Foldgers

This month donut shop and Duncan.

Honestly dude, I would regularly do 24 hours with only caffeine. Those were the gnarly CVStress days. Wake up, get your coffee. No time to eat or pee. Shotgun a monster or Red Bull or two (PR to impress a new tech was three in less than a hour). Get home at nine, wolf down a big dinner and pass out.

There are at least 14, but at least now it's clear. Yours is a meat sauce, ragù is something else.

Cube up some chuck and sear for color in EVOO.
Dice up carrot, celery and onion and sweat off.
Work in some tomato paste and deglaze with red wine.
Cook the wine down until evaporated and then add stock and tomato puree.
Cook on low heat for a couple of hours.
Finish the sauce in a saucier with the pasta. Mix in some pasta water and pecorino.

Why do Italians in general get so pissy about things like this? It's like getting mad at someone because of how they make a burger.

I'm not from Bologna, but I think calling that thing ragù is a bit much, but as you say it must be a new variant. Without minced meat and without sauce...
