Chicken Chilli - a personal favorite and staple takeout meal when I order Indian food. First time making it at home and boy did I knock it out of the park. I could eat this for a week straight. I used 2.5 lbs of chicken thighs and it was gone in two meals lol.

Chana Masala - still isn't perfect. I find this to be one of the hardest Indian dishes I have tried to make at home. It was fantastic, but definitely tastes homemade. I know ingredients are the main reason, I just haven't found a good source. The ease of using whatever is in the pantry is often too good to pass up for me too.

Last night's dinner. Grilled up burgers and topped it with a miso butter right before I put on the cheese. First time trying and I think I used a little too much miso but it goes so well with any type of beef.

I cooked some cheap ramen today for lunch, “chicken flavored” packet. I put some srichacha sauce in it and some peanut butter. First time doing that. Sooo good.

These all look great. If you find a good source for garam masala, please post it. I'm close to just making it even though I know I won't be happy with the first X batches at all.

I bought some from a local indian market. I have tried making it myself which was good, but not better than the stuff from the market. I think traditionally there are things like amchoor powder I haven't tried. I just used canned chickpeas and tomatoes too.

I can't eat canned tomatoes at all. The sauce is OK, but anything even slightly solid tomato in a can carries that can taste with it no matter what you do to it, and that gacks it up for me every time.

I'm a big fan of Kenji's and Ragusea's channels on YouTube. They have quality content that's fairly accessible for most home cooks.
