No, I used fresh wings from the butcher area of the supermarket. Had to break the flats from the drumsticks, but you might be able to ask them to do that for you in some places.

I Air Fry them then put them in the buffalo sauce & all that. Let it sit & then I put them into the oven to get the buffalo sauce to bake into the wings more.

Yep, perfect.

And yeah, I put mine back in the oven too, just to keep them warm and re-crisp them after I finally finished cooking them all.

I'd use flank... cut against the grain then marinade it for a while before dehydration.
