Is it common for these Sharks prospect scrimmages to not be 5 vs 5?

Last year it was 5-on-5. Not sure why they changed it, I'd have preferred it. I guess they want more offense for people in the stands.

He had one wayyyyy deep into the period. Mostly without the puck, he's quick and pounces quickly but got bodied out against a double team.

Yeah there was a borderline hit, and he was interfered with in an obvious manner while chasing the puck at one point. Mostly just bodied out, but smart positioning as advertised.
