Buddy the Elf went vegetarian for a few years. I am guessing he craved steak the most.
The key to homemade parm is a good pounder, panko breadcrumbs and a pan fry.Like pizza place chicken parm. Must be the deep frying and crunchiness I love the most. Our homemade attempts are barely edible since we don't deep fry it. I should have that for lunch tomorrow at one of the hole in the walls near my office.
Eggplant parm & chicken parm are food of the gods.

Eggplant is so versatile and used in a lot of different cuisines. It's the best when fire roasted and blended with lemon, garlic and harissa.![]()

I like all kinds of food. My favorites are Italian and Mexican. Vegetable lasagna, macaroni salad, penne, and seafood are among my favorites. I love cheese, but subtlety done. Not too much. Eggplant is pretty meh to me also.
I'll need to start using it more often. I've only had it a couple times, but maybe it was the meal that let it down.
