Personally I wouldn't mind say a book on each. Can fast forward through the 7 years at Hogwarts in a single book probably. Would still be an excellent read. Characters off the top of my head who I would like to see a whole book on would be Snape and Dumbledore. People such as McGonagall, Luna and Neville could maybe be combined together as they don't have as big of parts of the story but are still interesting.
