There's arguably no single hotbed of hockey in the UK. There's nowhere in the UK with a climate particularly suited to Ice Hockey compared to somewhere like Italy where hockey is primarily located in the North because of the Alps. As such I'd say it's partially a function of where there's multiple/better facilities you end up with more top level players coming through. The places with the most access to ice are Cardiff (wales), Nottingham and Sheffield which all have either twin pad facilities or 2 separate rinks (although Cardiff only recently got a twin-pad facility). Theres a lot of history in the Northeast but there's no longer any top level teams there.And in what part of the UK hockey is most popular?
I believe historically Scotland supplied more players, but nowadays that's no longer the case. Out of this year's squad only one player hails from Scotland. The most popular places going from place of birth are as follows:
Wales = 4
Yorkshire , the north east & Nottingham = 3 each
The other 3 are dotted around England
