If anybody just calls it “Carolina style,” you can’t trust them. You have Eastern and Lexington, one is vinegar based and the other is tomato based. They have to specify.

There's also the South Carolina mustard style. Be very skeptical of that possibility if they refuse to specify if they say Carolina style bbq.
