I grew up in O'fallon... went to Zumwalt back when there was only 1 Zumwalt. I Think it's called Zumwalt North now. 1. High cholesterol (LDL-C) is associated with increased atherosclerosis, which is the process by which plaque builds up within the arteries.
2. Saturated fat increases LDL-C in a large percentage of people.
3. We find lots of saturated fat in dairy products and red meat.
The three statements above are well-established. Often times, public health officials and doctors will take premises (such as the 3 above) and deduce that one should limit their consumption of certain foods (e.g. bacon) to avoid cardiovascular disease. However, we do not have direct evidence that eating a particular food (i.e. dairy or red meat) causes increased plaque in people's arteries.
