Yeti is a cool name and I think it'd go well for Utah and fans across the league. If that doesn't work, I'm always a big fan of seeing what animals live in the area or state and going with that.

They're famous for cougars, bobcats, badgers, etc. The California Gull is Utah's state bird, so the Utah Gulls could work. They've got this huge tree called Pando, which looks like a forest but is one interconnected tree at the roots. Utah Pandos? That'd take some getting used to.
