Random (probably dumb) question from someone who has never worked in the service industry; how do servers/bartenders collect their tips on debit/credit-card transactions? Do you cash that out at the end of the shift based on receipts/bills? How does that work?

Tips are taxable here. You have to report them legally speaking. But obviously not everyone does. I'd be curious to know the actual percentage of tips that are reported.

It's a 2 way street I guess. You want to be ethical about what you earn but at the same time whenever someone just slides you a fiver or ten (in appreciation for your personal service) what are you going to do, share it?

Yes. Cash tips are best because its easier to hide when you enter your tips as taxable income at the end of the night.

You should give at least 20% to waiters unless they're egregiously bad, although the obligation to tip accordingly on a nice bottle of wine has always irked me. Same with the counter tips. F that.

The most productive tips are when you're checking into a hotel. Be courteous, ask the person behind the desk if there are nicer rooms than what you booked, show a $100 bill (which doesn't come out to much if you're staying somewhere 4-5 nights), and if they have availability they'll almost always give an upgrade.

I'll tip less than 20% even if it wasn't "egregiously bad" but was still bad. Example... food comes out cold because the server never showed up to grab it from the kitchen. Drinks sit empty on the table for 20 minutes at a time. Food and/or drink order is wrong, despite the server writing it down... any one of those things qualifies as "bad" to me. I know some of these things can be the kitchen's fault, or they're super busy/short staffed, and I'll obviously take that into account, but if my drink is empty for 20 minutes, and you're standing around at the bar talking to the bartender... sorry, you're getting a shit tip. Expect 10-15%.

My worst ever experience was at a Buffalo Wild Wings. This is the only time I've ever actually gone and complained to the manager somewhere, actually. Went with my kids and fiance. We were seated, and sat there 20 minutes before the waitress ever came over to greet us and take drink orders. We ordered drinks and an appetizer at the same time. Twenty minutes later... drinks still haven't come, appetizer still hasn't come. The restaurant wasn't busy. This girl had maybe 3 tables(all in one area), and wasn't taking care of any of them. Finally she appears, and she goes and checks the table next to us, and never even looks our direction. Then we see her go over by the hostess podium, and she is just standing there talking to the hostesses. Another 10 minutes goes by with no drinks, no appetizer, and she's completely MIA again. Nowhere I can see in the restaurant. We can overhear her other couple tables complaining too. So I went and talked to the manager who was bartending. Explained to him that we sat for 20 minutes without her ever coming to greet us and take drink orders. Then when we ordered appetizers and drinks, we sat another 30 minutes, and still haven't received either. So he gets someone to cover the bar, and he makes our drinks for us. He then goes in back and brings out our appetizer... which is cold(I can't believe he actually brought the cold one out to us...) So we refuse it, and send it back, requesting a new one.(Cheese curds are awful cold) As he's leaving with the appetizer, the waitress finally shows up with drinks, sees they're on our table already, and walks away with the tray. She doesn't take our food order. The manager comes back out with the appetizer, and never even offers a discount or comp'd drinks or anything. So at this point... we're here an hour and haven't even ordered our actual entrees, so I told him that we've been here an hour and haven't even gotten to order our food yet as the waitress has just vanished again. He says he'll go find her. Waitress finally comes back and takes our food order. Another twenty to thirty minutes goes by, drinks are empty, waitress is nowhere to be found... no food brought out, manager is back to bartending(and Bdubs does not take long to get their boneless wings made). We got up and left. Never went back to that particular Bdubs. Didn't pay, and didn't tip, obviously. They basically got stiffed for one round of drinks that we actually drank. They had to "eat" the food. Sorry, I'm not staying in that situation, whether I ordered food or not.

Pretty sure at least one of her other tables also left without ever having their food come out. A young couple next to us was talking about leaving, also.

The drink thing is what will cause me to tip less. I've worked in kitchens, they can mess up your food. But the server is 100% in charge of refills. Even if the bar is slow, a good server will come let you know the order is in and they're just waiting on the bar. Also like you said above, if I sit down and no one comes over for 15-20 minutes.....thats a big no no.

Brutal. It seems like whenever I go to a B-dubs, most of the people working there are 16, don’t know if that was the case here.

That's really bad. I was once in a diner with my wife and kid, and the waiter took our order no problem. We waited and waited and waited for our food, and it wasn't coming. And diners are usually super quick, and we wanted to eat and run. So after about a half hour I called the waiter over to ask what's up, and he said he hadn't given our order to the kitchen yet. He said he was going table to table and taking all the orders and he'd submit them together because that's what was most fair. I told him how f***ing stupid that was, and shortly thereafter he brought out my soup, which was all I had ordered. Meanwhile we're waiting and waiting for my wife and daughter's food, and I called him over again to complain and reiterate how f***ing stupid his system was. He offered me a refill on my soda, which I declined, but he insisted despite my protestations. I saw him go to the drink machine, fill my cup, and take a step outside my line of vision. Obviously I wasn't going to drink it.

I'm pretty sure I paid for our food, but it's the only time in my life I didn't tip.

That’s what you get for going to Bdubs.

The best server I've ever had was at a Bdubs. She was like 20, spent time talking to us, making conversation, and at the same time managing to take care of 3-4 tables of people in a timely fashion. She chatted with all the tables. Basically, rather than go stand around and talk to bartenders/hostesses/coworkers, she would stay around her tables and make small talk with them. Drinks were always full for all her tables, food came out hot. Was constantly asking if everything was good, if we needed anything, etc. She was easily the best waitress I've ever had the pleasure of being served by. Came to find out she was working 2 jobs, paying her way through college. Had left her other job working 8-4, then came straight to Bdubs to work 5-close. Was talking about how tired she was(and looked tired) despite still being cheerful and engaging. We tipped $100 on a $50 bill. If it was all a ruse, and she played us with a sob story, then I'm still fine with it, as her service was outstanding. She seemed like a genuinely good person, though. I'm usually a pretty good judge of character.

We have a BWW by our house that we go to all the time, we are regulars. Went there with a bunch of people for the Derby. First my food didn't come out, then it came out wrong (chicken on a cheese quesadilla), they took it back and it came out wrong again. I got super drunk by the time my correct food came out 2 and a half hours after sitting down but I got my entire meal and drinks comped and I hit the trifecta on the Derby. Pretty great day. Think I ended up tipping my server like $20.

That may be the dumbest "system" I've ever heard of before...

So I'm going to wait 30-40 minutes longer for my food, because you want to take all the food orders at one time, when all your tables are ready to order?

I never tip on the total amount, as the "tax" can jack up a bill. when we go out and eat with the kiddos and have cocktails, the bill can jump from $150 to almost $170 on tax alone...I always take the tax out and tip 20-25% if service was good...my wife was a server when we met (yep, at Hooters in Oak Lawn lol) and she agrees and had tons of people do that as well, nobody should be tipping on tax IMO.

Especially in Illinois.

Don't they usually bring you a copy of the bill pre-tax at most places? Haven't been to a restaurant in about 6 weeks, so can't really remember.

Thought they brought you the itemized bill, pre-tax. You can look it over, figure out your tip, etc. You give them the card(or cash), and they process it and bring you the slip with the tip, total, and signature line on it, and the tax and stuff. Maybe I'm wrong? Drawing a blank.

I don't regularly include a tip on the tax, anyways.

not that I have seen, every bill I get has the tax already listed and rightfully so...

Right, but you receive two separate ones at most restaurants. They bring you an initial itemized slip... then when you give them your card, they process it, and they bring you another slip with the tip, total, and signature line. Just can't remember if that initial one always has tax on it or not... Like I said, drawing a blank.

Damn, you guys are good tippers.

I usually remove alcohol and tax and tip between 15-20%. Never more.
