No doubt.

Game to game. He scores in bunches and then goes invisible for weeks at a time.

Game to game, anyone can be inconsistent. Kovy, Zajac, and pretty much everyone besides our 4th line is the same way. Over a full season, you know what you're going to get.

which makes me wonder why without Kovy Zajac's possessions stats went up but the GA20 went considerably higher.

Remember the sample size isn't very high.
