There is plenty of interesting possibilities for late picks.
My two personal favourites right now are LW/C Marko Dano and G Patrik Bartosak.
Dano is a small skilled forward who played this past season with Slovan Bratislava in the KHL. Has great hockey awareness, fantastic hands, great vision, great shot, elusive but lacks top end speed and struggles somewhat defensively. A good comparable if he pans out is Justin Williams. Projected as a 2-4 round pick.
Bartosak was the best goalie in the WHL this season playing with Red Deer, IMO. A true competitor, solid positionally, good athleticism, but lacks ideal goaltending size. Passed over last year (somehow) can step into Ontario/Manchester next year.
Of course since those are favourites of mine they will likely end up with teams I hate, as has been the pattern last few years (Faksa-DAL, Rakell-ANA, Jurco-DET, Tatar-DET).
