The first thing you should do is define what metrics you are trying to improve. This will form your project charter. Then you can make a critical to quality tree, sipoc, and process map to identify potential occurrences of defects in the process. This will also give your a sigma score, which is how many defects are in your process per x opportunities.
I could go into more detail, but what ive described would be your first few weeks of a six sigma project. Some tools I recommend researching would be xbar r charts, fishbone diagrams, c charts etc.
A book I would recommend is the lean six sigma pocket toolbook. Its very cheap and gives you all the information with none of the fluff.
