Brisket was really, really good. The fries were soggy and bad. The raviolis were awesome. I got 5 different sauces, none were very good and some were just nasty.

the brisket alone made it worth it, though.

Wife was really happy with the pulled pork sandwich she got, and the Mac and cheese. She didn’t like the beans, I thought they were ok.

If you have to add sauce to barbecue (especially brisket), then it isn't good barbecue. Glad y'all enjoyed it, mostly.

fair point, and the brisket required no sauce. The pork sandwich was a bit dry and did.... but I like the sauces for the fries. I don’t fault them on the fries either because it was takeout, so that’s partly on us anyway.

I disagree with this.

Tastes differ, usually by region. But if barbecued meat of any kind isn't moist enough to be "wet" on its own, it's been overcooked & all you'll taste is the sauce.

This I can agree with. I'll put my opinion this way, in that case: the sauce should enhance the flavor of the meat, not replace the flavor of the meat. I'm basically agreeing, in other words.

Personally, my favorite regional style is probably a tie between Carolina style and Hong Kong style.

This is also my stance. Even perfect cooked BBQ I want a little sauce to go with it.

Not too much though and the meat should be marinated and cooked with the sauce. Bad barbeque is when you cook the meat and then dump some shitty storebought bottled sauce all over it.

And her excuse for having this view was that she's scared of sexual assault and her ex husband was abusive. With of course a bit of "muh biology" thrown in.

More recently she's released a novel in which the antagonist is a serial killer who dresses up as a woman to murder women
