Only had wagu once, and it was super thin slices cooked Pittsburgh rare as part of an app. Consider me envious
Birthday dinner actually, but I think it could pull double duty lol. I'm excited but also a bit nervous. I need to decide how thick I want to cut it up.

I fully support your decision. It looks like a steak, but its almost 6 pounds and boneless. How thick is that thing? What's the cooking plan?
It’s two separate roasts, I’ll probably wind up freezing one and cutting the other up into 2-4 steaks depending on exactly how thick it is.

Cooking plan is simple. Just a bit of salt and pepper, get a cast iron skillet hot as hell and give each side about 90 seconds of love.

Then we eat.
