If that is interference then each NHL hockey game has about 50 instances of it and nobody could ever throw a body check because the opponent could just throw the puck away right before contact.

They figured out how to stop hitting the quarterback after he released the ball in the NFL, they can do it in hockey too. The puck was LONG gone, Dillon had plenty of time to lay out of the hit. But I completely agree that it happens 50 times a game, From that perspective it's not a good call.
