Not really, especially considering his very average season last year.

If we are considering average season last years, at least he is not a .913 goalie shooting for 11 million.

8 years for a guy who is almost 30 seems excessive.

Sherk is asking for the same term and will get between 4 to 5 million more a year and is the same age. All things considered its not bad, but paying a goalie till they are 36 will not age well in both cases.

Ullmark is playing his 10th NHL season and has .918 Sv% over almost 250 games. If he isn't proven, no goalie is.

Ullmark has only started at least half of his teams games once in his career. Maybe it means nothing and he'll go 60+ this year and be great. But I'd definitely say he's unproven as a workhorse big money goalie, unlike Saros who pretty much always leads the entire league in starts.
