I'm torn on this, obviously you can't treat them like a skater and just blow them up, but I feel like a lot of the time goalies will take up all the space behind the net knowing they're untouchable, and they never seem to get called for interference.

Yeah, I don't want to see defenseless goalies crushed, but I do want to see them not be able to take their sweet ass time behind the net playing a puck and basically setting a big pick back there without fear of physical contact.
