I'm okay with a challenge, but the refs shouldn't be allowed to watch it in slow motion or freeze frame it.

If it's too close to call, then it doesn't matter anyways. The goal stands.

This way overt mistakes can be corrected, but marginal offside that has no effect on the play stands.
