Contracts not withstanding, a 50+ point defenseman is much more valuable than an undersized winger considering both players are in their 20s. Just the way it is.
39 points last year which is closer to his current value objectively speaking who is looking for big contract as your team rebuild vs 60-80 pts wing even if he's undersized who is 22 years old who can be part of the rebuild.

Sharks can also add some prospects or picks that I listed but I don't think the centerpiece is that far off already. They have one of the deepest pool to rejuvenate your pipeline.

Small sample size in a season where Barzal missed the majority of it. Plus it's prorated 45 over 82 games.

Bigger sample size:
230 points in 388 career regular season games, just under 49 points per season

There's nothing reasonable that you can add that can bridge the gap because it's incredibly lopsided in SJ's favor.

If NYI wanted to rebuild, they could get a haul for Dobson in a different trade while also not trading down from 1OA to 2OA. I'm not sure why you think we would have to trade Dobson to the Sharks in a highly unfavorable deal. There would be 30 other teams who would be interested in a 25 year old, 50 point RHD.
 
Sharks already have Dickinson in the pipeline. They have zero need to trade up here just for Schaefer.

If NYI picks Misa or anyone else, we get Schaefer anyways.
If NYI picks Schaefer, we still have Dickinson and will draft Misa.

If Schaefer was an RD, then I can see the need for them to make a trade offer to move up, but not in this case.

I am not sure calling a 22 yo winger who hit 60 pt in 2 years straight with 80 pt upside drafted #7 is incredibly lobsided.

What do think you can get for Dobson that can't be bridged with the Sharks pool given they are ranked at top 3 at least by most experts if not the top... They got kids like Cherny who played with Misa and Musty to Cagnoni who broke out in the AHL etc.

As a fan of neither team at this point, I am genuinely curious what you think Dobson can fetch as a RFA looking for a large contract with new GM likely to go for rebuild. I also don't see a big enough gap between a first pick choice between Schaefer and Misa at 1 or 2 OA. Perhaps I am undervaluing Dobson based more on his last year where I see him more as a top 4 guy but not top pair on a contender with his defense.
