I’m trying to make a small airbrushing booth using a cardboard box, a bathroom exhaust, LED strips, and a dpdt toggle switch but I cannot fathom how to wire it up.
I want the light to be able to turn on by itself in the up position and both the fan and the light to turn in the down position, with neutral being off.

You would need 2 separate "hot" wires coming from the switch. You could use 3 wire for this. Use the black to power the light and the red to power fan/light.
The problem is what to do when you get to the fixture. In order to power both fan and light, they need to be pigtailed together. How you do that without always powering both is where the issue is. You'd need two separate wires from the fixture itself to power the light, and don't think you can do that. They would need to be isolated from each other, otherwise anytime you turn the light on it will also power the fan.
Edit: I think there is a way....or maybe not lol. I don't have time at the moment. If I figure it out I'll let you know.
This is my inspiration, but I’d like it to be less ghetto. I wouldn’t be moving mine so I’d like it to be a little smaller and without the need to plug in the fan when I want to use it, which is why I thought of the on-off-on switch. If there’s an easier way, I’m open to it.

One side of my family was English/Scottish. The other was from Allsace Lorraine, so french/German. The Mrs is German, and we are Lutheran.
Is there any way to wire LED lights into an X pattern, meeting in the middle?So I first thought you were talking about a vent/light you see in a lot of bathrooms. Then I saw you mentioned LED strips for the lighting.
The solution is easy, but you will have to buy a 2nd LED strip. I'd run them right next to each other so you basically get the same lighting regardless of which is on.
Then wire them the way I described earlier. Up position goes to one strip. Down position goes to the other strip and the fan.
I'm assuming you know wiring 101 so hopefully that helps, but if not let me know and I'll PM you. Happy to help.
