dry, moldy steak?

That's what dry aged steak is. The mold, like in cheese for example, adds top the flavor, changing it. The restaurant in the OP though likes to push the boundaries as normally steak houses dry age them for less than 30 days but this place goes far beyond that. Kind of funny how people in the threat are posting how they like their steak cooked which has nothing to do with dry aging :laugh:

Medium rare and I like to know the cow's name and if it was cute or not. And to be honest. The younger the better. If steak tasted good from cows slaughtered right after birth I wouldn't eat it any other way.

Having spent most of my life in North Carolina and Alabama, I must confess that I much prefer pork to beef. That said, when I do have a steak, I am a fan of Chicago-style. AKA - Burnt on the outside, but blue rare in the middle. I've also never really given any thought to how long the steak is//isn't aged. It's honestly not something I really ever think about.

Also, there are two sushi places here in Calgary that I go to that offer Alberta beef sashimi that is pretty good and that I would recommend.
