How do you catch a cheese bandit?

Listen boys,

Someone at our office is stealing cheese from the work fridge. Sometimes can drinks go missing but not like cheese. I heard a story about someone's sandwich bag being opened up and the sandwich being left except the cheese was taken. Some people cut up cheese into cubes for a snack at work and that goes missing.

Apparently it happened again overnight last night so it's someone who works late/overnight.

What can we do to catch the cheese bandit?
