Recently picked up a PS2, remember I loved the NHL series but forget the details.
What game has the best GM mode? Any where you can edit players ie. change the names, attributes

Was going to say HITZ 2003, but if you're looking for GM mode, the 2K series was good and I really liked NHL 06 back in the day.

Been playing 2004 for months now because it really is just so fun.

To the OP: Can't remember the exact details for NHL 04, but the GM Mode is pretty damn great. One of those classic EA GM Modes where you can customize your office and such.
