Having went through 3 drafts on Wikipedia, rounds 3-5 have good players scattered throughout, teams are somehow very bad in round 6, and then round 7 there are usually a few that work out well but the rest you’ve never heard of.

Going to have to disagree with you about Berard, as a Ranger fan.

People know about him because he played two WJC's, and was instrumental for the USA in the first one. He was also good at Providence for two seasons, but his third season his game pretty much fell off a cliff, and it started with a disappointing second WJC that he continued into that third season with Providence. For a sub 5'10 forward that always was a long shot due to being undersized without amazing skill, I think there are major questions if he ever reaches the NHL. He could get it back, but that last season was a major step back for him.
 
Carter Mazur for Detroit (2021 3rd round as an overager). Has done nothing but improve and show up at every level. Grew up idolizing the Wings and he said it himself that he loves to that pain-in-the-ass player and pissing guys off. Nice finishing ability and knows where to find open space. Hard worker.

Undrafted Logan Morrison who was just signed by Seattle a couple months ago. Played in the OHL last year as an overager (draft year was originally 2020) and tore it up. Super high IQ and high end playmaking and shot arsenal. Always positioned well in all 3 zones. Skating and explosiveness needs work at the next level so I'm not sure he makes it, but he's a real solid prospect if that pans out.
 
Brett Harrison has been pretty good, not sure if he has the mindset and work ethic to make it to the next level however. Has an absolutely lethal shot.

Andre Gasseau looks very good too. Time will tell if he is a steal, but he is already outperforming his draft position.
 
Leo Loof and Simon Robertsson are the only chances the blues have in this specific category. Loof is most likely a bottom pairing guy, and Robertsson is a boom or bust middle 6 scoring winger.
 
New Jersey has two late round picks from the 2021 Draft who are showing well in Europe and could earn NHL spots one day.

Someone already mentioned defenseman Topias Vilen (5th round) - who will be in either New Jersey or Utica this season. Center Zakhar Bardakov (7th) played full-time minutes for SKA St. Petersburg in the KHL as a 21-year-old.

Phillippe Daoust might be in the conversation if not for a season ending shoulder injury.

168th OV in 2020, went from .5 ppg to 1.25 in the Q and started his AHL rookie year with 7pts in 9 games before his injury which caused him to miss the entire year.

I don’t think anyone was ready to anoint him as a future NHLer by any means, but if he played the whole season he might be in the discussion. Will be interesting to watch this coming season, especially since the B-Sens have much more depth than last year
 
Flyers drafted Alexei Kolosov in the 3rd round and Ethan Samson in the 6th. Kolosov already looks like a steal and Ethan Samson has had a few really good seasons since the draft

2021 7th rounder Max Wanner hasn't been mentioned yet. Had a very good D+2, I thought he was the best two-way D for Moose Jaw last year. I can see his game translating to the NHL, he's got tools to be at minimum a fine bottom-pair defensive D. Does any Oilers fan have an inkling on where he's likely going to slot in on their AHL squad next year?

Buchinger is another one. Has a legit shot at being an NHL player, which is more than a lot of 3rd rounders at this point in their development.

For the Sabres:

2021 has three mid/late round guys who I think have legit NHL future. Like bet on it assumption.

1) Oliver Nadeau - 4th round. Foot speed is a problem, but the guy has a niche that will let him carve out a role. He is incredibly effective at net front presence, and is smart enough to be effective in other areas of the ice. I think he is a bottom six lock, and if he can improve his foot speed a potential middle six forward option

2) Nikita Novikov - 6th round. 6'3 Dman who has played over 100 KHL games over the past two years with Dynamo. Hasnt produced a lot on Russian ice, but looks very good on NA ice. He was a stand out in the development camp this year, and I wouldnt be shocked if he is talked about for the Sabres blue line as early as next season. Good footwork, very solid fundamentals, and a body to support his style of play. If he can continue to develop, he has top 4 D potential

3) Tyson Kozak - 7th round. Sabres signed him and plugged him into Rochester a year after he was drafted, simply because they felt he had a better development curve there. Played limited minutes, but coaches gush over his play and compete. Scored 5 points in 14 playoff games in the AHL this past year, and I would expect him to be a 30-40 point guy this season in a slightly expanded role in the A. Bottom six potential Center who is hard to play against.

Already mentioned but Dufour is one that is trending in the right direction and Elliot Desnoyers is one that i am also high on to make it in the NHL and do well.
Dufour has a long way to go, even if he scores 30 goals in the AHL this year. No one doubts his shooting. But he doesn't look like an NHL player in transition to me. I'm not saying he can't be, but I wouldn't call him a steal yet.

I don't disagree. However, when he was drafted he was a bit of an unknown only scoring 55 and 30 pts a season in his first two junior seasons. After he was drafted he was one of the best players in junior hockey scoring 116 pts, played on the world jr team, was the memorial cup MVP. Then followed that up with a strong first AHL season.

He's accomplished about the same as what you would expect from players taken in the 1st and 2nd round but was taken as a 5th rounder. For example, Mavrik Bourque was taken 30th overall by Dallas and when you list his accomplishments to those of Dufour they are almost identical. At this point i would consider that a steal and time will tell if he can put it all together at the NHL level.
